Remember those beet burgers I made way back when?  Turns out, they’re also incredible if you don’t add egg or bread crumbs and sautee the ingredients as a hash.  They’re good with eggs or in a flour tortilla with some sort of yogurt tzatziki sauce.

1/2 Order of Eggplant Parm from Santasiero’s on Niagara and Lafayette in Buffalo, NY.  The place has been open since 1921.  It’s a favorite of Lenny Rico, who hosts WJJL’s (1440 AM) Italian-American radio show, Casa Rico.    Here’s the menu:

During a brief summer respite in SW VA, Lowell and I explored Rocky Knob Gorge, an 11 mile hike off the Blue Ridge Parkway.  The hike was beautiful, hot, sticky, long, hilly, and lovely.  It was amazing to be in complete wooded isolation for an entire day.    We packed these beet&carrot burgers that were absolutely delicious:

1 shredded carrot, 1 shredded beet, 1 Tbl shredded ginger, 3 crushed garlic cloves, 1 beaten egg, 3/4 c breadcrumbs, 2 tsp coriander, 1 tsp cumin.  Mix everything, form patties, and cook in some oil.

The unexpected treat was the overwhelming blackberry patch bursting w/ ripe berries atop the final ascent.  We picked until we bled and then came directly home and made cobbler.

End of the Line Cafe Brunch

The firs time I went to End of the Line I promised myself I’d try the fixed menu vegan brunch ASAP.  It was really the only place I wanted to eat in Pensacola.   I waited till our last day to try it (maybe, perhaps to keep Pensacola mysterious), before moving on.  I’m sorry, I can not tell you what everything on the plate is. All I know is it was vegan and delicious. It started with a green soup (which is how the waiter described it), proceeded to a vegetable gravy (vegan cheese and nut based?) with spice bread and grits. It all ended with a vegan chocolate brownie. It took a couple hours too long, but we sat in the sun at picnic tables in the back garden, and said goodbye to strange Florida.
